Description
The Sibona distillery, located in the municipality of Roero in the heart of an important wine-growing region of Piedmont, is renowned for its high-quality grappas. Founded a century ago, it holds a historic distillation licence. Thanks to meticulous distillation and ageing in special casks, Sibona grappas acquire exceptional typicity and nobility. The ageing cellars house a variety of casks, including some of Port, Madeira, Sherry and Rum, giving rise to special reserve grappas and the exclusive Sibona XO Grappa.
Tasting
This special Grappa, which had already been aged for a long time (over 2 years) in oak, was then aged for over 24 months in casks purchased in Portugal and already used to mature vintage Ports from some of the most prestigious wineries.
The special aging process in port casks, already used in the whiskies, was tried out by them in an innovative way on Grappa, with exceptional results in terms of quality.
The delicate, distinctive aroma and unique, full, elegant flavour with a fruity aftertaste are very reminiscent of the port already contained in these casks.
