Description
The Dupont family has been producing apples in the Pays d'Auge, in this little corner of Normandy, since 1887. In 1980, Etienne Dupont took over the family estate from his father Louis. He extended and modernised the estate, refocusing on the production of cider and calvados. The old orchard was redeveloped, and ten new hectares of low-stemmed apple trees were planted. He travelled to Cognac to learn the best techniques for double distillation. Etienne Dupont was also behind the creation of the A.O.C. Pays d'Auge appellation contrôlée. The poor soils of the Pays d'Auge, made up of marl and marly limestone from the Oxfordian period (secondary era), limit the growth of the trees, which only produce small fruit. As a result, the aromatic intensity is stronger and the skin/pulp ratio favours the extraction of tannins. The level of precision achieved in their range is what we would look for in wines.
