Description
Stéphane Gros, who heads a 6.5 hectare estate in the village of Dardagny, makes racy, powerful wines for laying down. His motto: "Wine is made in the vineyard, 95% of a wine's quality comes from the way in which the grapes have been tended during the year.
The winemaker only has a 5% margin to make it light with the vinification. A fan of low yields and prolonged ageing, he is never in a hurry to bottle his wines, and the vintages are always out of step with the majority of his colleagues. Precise, meticulous, almost manic, the cellar is so clean you could eat off the floor.
One of the icons of the Dardagnotte vineyard, his wines are often in short supply. After a great deal of (gentle) pressure and threats, we managed to get a few treasures out of his cellar.
