Description
Location : The appellation area is situated on the left bank of the Rhone River, between Orange and Avignon.
Soils : The main feature is the large rounded stones or pebbles known locally as 'galets'. They retain some of the intense daytime heat of the Provencal sun and then slowly disperse it to the vines during the night. This layer of stones is two metres deep and beneath it, there is a layer of clay, through which the vines roots penetrate in search of water. In short, an exceptional soil. Most of our white varieties are planted on the chalkiest part of our vineyard, so that our wines express the maximum of aromas, elegance and finesse.
Climate : Mediterranean with particularly hot summers. The Mistral wind blows away any humidity, ensuring climatic conditions very favourable to the cultivation of vines.
Harvest : All grapes are hand picked, which enables to select the best grapes. This is a major point in the quality of our wines.
Winemaking & Ageing : Immediate pressing in pneumatic presses. The juice is clarified by cold sedimentation (10 - 12° and a light fining. Fermentation happens at low and constant temperature (between 14 and 16°C) and lasts around four weeks. This wine does not go through malolactic fermentation to keep its natural acidity and freshness of the aromas. Then bottling happens in April following the harvest after an "Elevage" on fine lees in tank.
Tasting
Their white Châteauneuf-du-Pape is attractive when young within 2 or 3 years following the harvest, if you are looking for the wines to be fragrant, fruity and elegant. Lovers of more mature white wines should wait another five years or more until our wines develop their secondary aromas: honey, white truffle and reminiscent of acacia
