Description
XO means "extra old": this nickname is reserved for the best eaux-de-vie, provided they have been aged in wood for at least six years and have thus reached an optimum degree of maturity. The XO Sibona project was launched several years ago by carefully and expertly selecting limited quantities of the best pomace from the most prestigious grape varieties in the Langhe and Roero regions, such as Nebbiolo (Barolo and Barbaresco) and Barbera. After a masterful distillation, they have been blended to create a unique blend in the world of premium grappa, a special cuvée. Grappa XO Sibona is aged for over six years in small French oak casks in the distillery's historic cellars.
Tasting
Eye: Amber with golden highlights.
Nose: Refined and elegant. The initially vinous note develops into hints of vanilla and red fruit.
Palate: smooth, complex and silky. Tastes of tobacco, redcurrant and oak. The finish is resolutely long and persistent.
Food and wine pairings: Dried fruit, nuts, almonds, desserts and chocolate (especially dark chocolate with a high cocoa content). Also delicious with mature cheese. Also perfect with a cigar.
To serve: Enjoy at a temperature of around 18°C in the classic tulip or in a balloon glass with or without a stem (similar to a cognac glass).
