Description
The Domaine Famille Dupont covers 30 hectares of orchards in Normandy, in the heart of the Pays d'Auge. The estate produces ciders, pommeau and calvados.
For over 25 years, the estate has been resolutely committed to a quality approach. Drawing inspiration from the best techniques used for cognac and grands crus, Etienne Dupont has studied, experimented with and refined his winemaking techniques to achieve the same level of elegance and expression as the best wines.
Some of these techniques, such as hand-picking the apples or working with an oenologist, are rarely encountered in cider-making. As with wine, the quality of the apples remains the essential preliminary stage. Cider-making then simply brings out the expression of the apple and its terroir.
Special features of the estate: vintage ciders... a cuvée of cider aged in oak barrels... a cuvée made using the traditional sparkling wine method... a sweet apple wine... unreduced calvados.
Tasting
Eye: White with pale yellow tints. Clear and brilliant.
Nose: Powerful, fine, fresh and very complex for a Calvados of this age, fruity then floral. Aromas of green apple and citrus predominate, with hints of cherry and floral notes.
Palate: Fresh attack, supple, round on the palate, consistent, retro-olfactory, long, intense.
Storage: very long, bottles upright, no special precautions required.
Food and wine pairing:
- As an aperitif: on its own, on ice or with a drop of water. An excellent base for cocktails.
- At the table: serve chilled with marinated or smoked fish.
- For dessert: with dark chocolate cakes and apple sorbets.
