Description
For Crème de Cassis de Dijon, Maison Briottet uses 20% of the noblest variety of blackcurrant: "Noir de Bourgogne", harvested exclusively in Côte d'or (Burgundy). These blackcurrant berries are macerated in a hydroalcoholic solution for around 10 weeks to extract all their aromatic power. The resulting alcoholic juice is called "infusion". This infusion is the basis for Crème de Cassis, to which white sugar is added.
