Description
This wine associates its quality with the name of the Carthusian monks who, since 1598, practised a solitary life of prayer at the convent of Santa Maria Scala Coeli in Évora.
It was first produced in 1986.
Produced from Aragonez, Trincadeira, Alicante Bouschet and other grape varieties, planted in the vineyards of the Eugénio de Almeida Foundation. When the grapes reach the ideal stage of ripeness, they are harvested and transported to the winery, where the technological process begins with complete destemming and light crushing. The grapes are then fermented separately in stainless steel vats at a temperature of 27ºC, followed by a prolonged post-fermentation maceration. Aged for 12 months in French oak barrels and 18 months in bottles, in the cellars of the Cartuxa monastery.
Tasting
Appearance: Deep garnet color with a brilliant sheen.
Nose: Seductive aromas of ripe dark fruits, particularly black plum, enriched with spicy, smoky, and mineral notes.
Palate: Full-bodied wine with silky tannins, a lovely freshness, and a long, persistent finish that reflects the authentic character of the Alentejo region.
Food Pairings: Perfect with grilled red meats, rich stews, or aged cheeses.
Serving Temperature: Serve between 16°C and 18°C to fully enjoy its aromas and structure.
