Among the first writings on the Hermitage, Thomas Jefferson, United States Ambassador to France, declared his admiration for these white wines returning from a trip to the region in 1787.

Tasting
Appearance : Pretty yellow dress, dense, with green reflections.
Aroma : With a good intensity, the nose is complex and subtle, mix of ripe fruit (quince, honey) and fresh fruit(peach, lemon, acacia flowers, sweet spices).
Palate : Frank attack, the mouth develops a beautiful balance, rich and persistent. The final is long, aromatic, very elegant.
Food pairing : Suitable with Bresse poultry.
Service : One hour in a carafe will be beneficial for the wine and the service will have to be done at a temperature of 12-13°C.
