Description
The Sibona distillery, located in the municipality of Roero in the heart of an important wine-growing region of Piedmont, is renowned for its high-quality grappas. Founded a century ago, it holds a historic distillation licence. Thanks to meticulous distillation and ageing in special casks, Sibona grappas acquire exceptional typicity and nobility. The ageing cellars house a variety of casks, including some of Port, Madeira, Sherry and Rum, giving rise to special reserve grappas and the exclusive Sibona XO Grappa.
Tasting
Eye: Intense amber.
Nose: Intense, full, ample, with great personality. Vanilla, berries and toasted oak stand out.
Palate: Ripe, with an elaborate structure, deep and velvety. Well-balanced with harmonious woody notes. Long, persistent aftertaste of vanilla and tobacco.
Food and wine pairings: Dried fruit, nuts, almonds, sweets and chocolate (especially dark chocolate with a high percentage of cocoa). Also delicious with mature cheeses.
Serving suggestions: enjoy at a temperature of around 18°C, in a classic tulip glass or a balloon glass with or without a stem (cognac type). An exceptional meditation grappa, to be enjoyed sip by sip, feeling the warm, unique sensations it can transmit.
